Cook Time: 25 minutes

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 bell peppers, chopped
  • 3 teaspoons garlic, minced
  • 3 (14.5-ounce) cans diced tomatoes
  • 1 (15-ounce) can low-sodium black beans, drained and rinsed
  • 1 (15-ounce) can low-sodium kidney beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 tablespoon chili powder
  • ¼ teaspoon cayenne pepper (optional)
  • Black pepper to taste

Instructions

  1. In a large stock pot, heat olive oil over medium heat.
  2. Add onion, peppers and garlic. Sauté until tender.
  3. Add remaining ingredients.
  4. Bring to a boil, then reduce heat to a simmer for about 20 minutes.
