Ingredients
- 1 1/4 cup unsweetened soy milk
- 1 teaspoon apple cider vinegar
- 2 cups all-purpose flour (see notes for substitutions)
- 1 scoop protein powder of choice
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1/3 cup oil
- 1 teaspoon pure vanilla extract
- 1 1/2 cups fresh blueberries
- 1/4 cup apple sauce
- 1-2 tablespoons coarse sugar, optional, for sprinkling the tops
Instructions
- Preheat your oven to 400°F. Line a standard muffin tin with liners and lightly spray them with oil.
- In a measuring cup, mix the soy milk and apple cider vinegar, then set aside to curdle — this will act as your “buttermilk.”
- In a large mixing bowl, whisk together the dry ingredients: flour, protein powder, sugar, baking powder, salt and cornstarch.
- Add the soy milk mixture, applesauce, oil and vanilla extract to the dry ingredients. Stir gently with a large spoon until just combined — some small lumps are fine. Avoid overmixing.
- Carefully fold in the blueberries. Using a small measuring cup or ice cream scoop, fill the liners about 3/4 full. If desired, top with a few extra blueberries and a sprinkle of coarse sugar.
- Bake for 22-26 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack. Enjoy!
- Store any leftovers in an airtight container at room temperature for up to 3 days. To freeze, wrap muffins individually in plastic wrap and place them in a large freezer bag.
